I don’t consider myself a foodie but the way the whole lockdown has made me eat so much, I will very much qualify as one now.
I have a favorite food and it’s a delight to see it every time. It’s not my favorite because of the taste. It became my favorite because of a memory attached to it and the way it makes me feel when I eat it.
Some 6 years ago, I met a friend and we clicked almost instantly. Shortly after we met, we started spending so much time together and doing so many things together. The first meal we had together was deihuo also known as Tuo Zaafi (TZ). The meal was delicious and the atmosphere was beautiful. It soon became a ritual for us to go eat TZ together.
Tuo zaafi is a Northern Ghanaian dish. It is made by stirring a suspension of the flour in boiling water. In the Hausa language, tuo means stirred, and zaafi means hot. Sticky, starchy, and full of carbohydrates, tuo zaafi is traditionally served with okra soup or Ayoyo soup.

It’s is best enjoyed with a dash of hot pepper, ginger, and chopped onions. I usually take it with cow meat and cooked egg and sometimes ”towel” (I don’t know the kind of meat it is).
